Mexican Coffee

Mexico is the seventh largest coffee producer in the world, most of which is of the arabica variety from the southern part of the country, where it is grown by smallholders and sold on to the National co-operative.

Vera Cruz State, on the gulf side of the central mountain range, produces mostly lowland coffees, but coffees called Altura (High) Coatepec, from a mountainous region near the city of that name, have an excellent reputation.

Think about it, have you ever seen a fat vegetarian? Probably not. In fact, for most of us, vegetarian is almost synonymous with lean and healthy, isn’t it? And when you start any diet, what’s the first thing the experts tell you? Generally it’s to increase the amounts of vegetables you’re eating and to eat limited amounts of meat, especially high-fat red meat and pork.

And what happens when you resume your old eating habits? Generally the weight will come right back on. Even the greatest will-power can’t overcome the unhealthy effects of eating high-fat meat.

While one of the most interesting facts on honey storage is that it doesn’t spoil even with zero preservatives and additives, liquid honey is susceptible to physical and chemical changes during storage; it tends to darken and lose part of its aroma and flavor. Liquid honey also tends to naturally crystallise and become lumpy after some time. Crystallisation is easily reversible and does not affect the taste and quality of the honey, although it alters its looks and texture. Thus, for commercial reasons, a shelf life is indicated on the honey bottles in the shop.
