This is a great cookbook because it walks you through all the steps to make the dishes and gives you the data behind why they did what they did. All that I have made from it is just great.

If it’s quick and failsafe you seek, you can’t go wrong with an America’s Test Kitchen cookbook, which tests and cross-tests all recipes to gain the maximum from flavor and foolproof results, and this 2008 edition collects dishes from the last year where over two dozen test cooks developed nearly 1,000 recipes for books, magazines and the associated TV show. Recipes which were either unique or winning standards both are featured here, along with a peppering of color photos and clear directions.

Avoid making the cover recipe! by M. Shepard
Normally I’m a fan of Cook’s Illustrated and America’s Test Kitchen, but the first recipe I tried was the cover recipe. I am a seasoned cook, and baker. The egg white frosting does not hold up as mentioned by the author. After 4 hours it was a weeping, and so was I (just kidding). In addition, the lemon curd filling leaves much to be desired. I have much better recipes from other sources. I used very fresh Eggland Best eggs, yet the curd had an unpleasant yolk-like off flavor accompaning the lemon flavor. Luckily, I used fresh lemons from my tree, so the cost and loss was limited. The cake texture itself was not light, nor dense, but in between - nothing exciting. Needless to say, I will never make this recipe again, but I know there are other good recipes in this book. Hence, I only gave it a 3 star rating, but the cake was a zero star for me only because negative stars aren’t an option. Sorry America’s Test Kitchen, you missed on this one.

Love this Book! by Erin Carnes
I love everything from “America’s Test Kitchens”. Their books are easy to read and follow and they have taken all of the guess work out of making everyday recipes. You end up with the tried and true version and they haven’t let me down yet.

I received this book just before Christmas and made a dessert from one of the many receipes. It turned out perfect! Keep these books coming!
