Amzon.com:
George Stella’s Livin’ Low Carb has little in common with diet books: In fact, it’s got more in common with a cookbook you might have bought for yourself when you first moved out on your own. The style is casual and approachable, with no tense lists of diet-related details or overly-complex recipes, and cooking techniques require little more than a working stove and a frying pan.
George Stella (along with pastry chef-wife Rachel) have developed a wide range of recipes designed to compliment Atkins and other low-carb diet regimens. Rather than relying on packaged convenience foods that meet these dietary standards, they focus on home-cooked meals that satisfy the demands of low carb life without tasting like they were baked up in a factory. Flavors include Chinese (Szechuan stir-fry), Italian-American (clams casino), Southern (fried chicken), and American sweets (chocolate chip muffins and no-bake Key lime cheesecake). Snacks, salads, entrees, and desserts all see equal amounts of attention.
There’s a heavy reliance on the sugar substitute Splenda, but in general this is real food for daily life. The condiment chapter contains homemade versions of ketchup, mustard sauce, barbecue sauce and even Thousand Island dressing, and makes a simple place to get started even if the only kitchen appliance you’re comfortable with is a can opener. Each recipe clearly notes “special equipment” (like 8-inch square pans) as well as the yield, net carbs per serving, and separate times needed for prepping and cooking.
Because of the sugar substitute and number of recipes that alter classics in ways that compromise traditional textures in favor of lowering carbs (such as noodle-free lasagna), the book is most likely to be used by dieters, rather than all home cooks. Still, if you’re looking for easy ways to tinker with your food intake that doesn’t involve packaged mixes from the diet industry, Stella offers plenty of tasty options. –Jill Lightner

For lunch or dinner try Low-Carb Pizza, Tequila Chicken Quesadillas, Spaghetti Squash Alfredo, Lasagna, Anaheim Shrimp Scampi, and Southern Fried Chicken. And don’t forget soups, salads, and vegetables! You’ll find recipes here for Key West Caesar Salad, Turkey Vegetable Soup, and Garlic Mock Mashed Potatoes. If it’s sweets you crave, try Chocolate Pecan Brownies or New York Ricotta Cheesecake. There are also party recipes (Nutty Muddy Trail Mix, Teriyaki Sesame Tuna Skewers), tasty drink concoctions (Strawberry Milkshakes, Lemon-Lime Slushees), and a wide array of condiments and dressings (including Quick and Easy Ketchup and Thousand Island Dressing).

Delicious! by W. Mate
This is a wonderful cookbook that just happens to be low-carb. The Tequila Chicken recipe alone is worth the price of the book. Hmm…I think I’ll make it tonight!
George Stella is the best! by Lola Brown
You can’t go wrong with George Stella’s cookbooks. Every recipe is amazingly good. When I first started on low-carb, my husband got out his own frying pan and was going to cook his own food, certain that I was going to be making things that would taste like sawdust. From the very first recipe, he was hooked and now we both happily gobble up this food. We’ve lost weight, we feel great and best of all, we’re eating like kings! Thank you, George, and keep ‘em coming!
Both his books are GREAT! by SL
I bought both his books and I am still amazed by how good the recipes are. My hubby and I cook to his books every weekend. You won’t regret getting these if you are doing low carb!!
Not all recipes appropriate for South Beachers by WallyFam
It is hard to argue with the results Stella has seen following the Atkins version of low carb dieting. I bought this book because it was a low-carb cookbook that got great reviews. In my ignorance of the variations between low carb diets, I expected it to be like the South Beach Cookbook I have come to rely heavily on. It is not. For me and my family, we will stick with healthy fats and proteins, as recommended by the South Beach Diet, and we’ll be skipping the saturated fats that are common in Stella’s recipes. Many of his recipes call for heavy or whipping cream, bacon, and full fat cheeses. As a once in a while treat, heavy cream is ok. In our muffins every morning, not so much!
In my mind, low carb does not necessarily equal healthy if it includes the unhealhty saturated fats. Needless to say, now I do know the difference between Atkins and South Beach! It was my mistake, and I can’t ding the book for it. The publisher’s description says clear as day “they both began losing weight while eating things they used to think were off-limits (like bacon, eggs and real butter).” That should have tipped me off!
All of that being said, the recipes I have tried are very good (love the Tequila Chicken and the Crab Stuffed Mushrooms), and I just substitute lower fat ingredients when I can. A bonus for me is that many of these recipes are wheat and gluten free. Low carb cookbooks are a wonderful option for wheat/gluten sensitive people.
So while I’m not in agreement that all fats should be considered ok in healthy eating plans, I have found many acceptable and delicious recipes in this book that are in keeping with the South Beach Diet lifestyle.
